Position: Head Sushi Chef

Location: Los Angeles, CA

Employment Type: Full-Time

What You’ll Do:

• Lead daily sushi operations with a focus on quality, presentation, and timing
• Design seasonal menus and omakase offerings in collaboration with ownership
• Source the highest quality fish, including direct imports from Japan
• Train and mentor junior sushi chefs and kitchen staff
• Maintain strict hygiene, food safety, and knife safety protocols
• Monitor inventory, control costs, and reduce waste without compromising quality
• Ensure the guest experience reflects the elevated standards of Yume Sushi Bar

Qualifications:

• 3+ years of experience in high-end sushi establishments, including 2+ years as a lead or head sushi chef
• Mastery of knife skills, fish preparation, and traditional Japanese techniques
• Deep knowledge of Japanese ingredients, rice preparation, and seasonal seafood
• Passion for hospitality, presentation, and detail
• Ability to lead with calm authority in a fast-paced, high-pressure environment
• Fluency in Japanese culinary terminology preferred
• Familiarity with omakase-style dining is essential
